Overview: Consumer interest in organically grown foods has opened new market opportunities for U.S. producers, leading to a transformation in the organic foods industry. Organic farming became one of the fastest growing segments of U.S. agriculture during the 1990's with producers turning to organic farming systems as a potential way to lower input costs, capture premium markets, and boost profits. Packaged Facts, a market research firm that has reported total organic retail sales through all outlets since 1996, estimates that organic food sales were $7.8 billion in 2000, with sales growing 20-25 percent annually. This report describes a project based on this context.
