Overview: Popular in Europe and other continents, aseptic milk never has been a hit with American consumers. A primary reason is ample refrigeration in U.S. households. Another is taste; Americans don't like the cooked off-flavor notes common to aseptic milk. New processing technology, however, could change consumers' flavor perception of aseptic milk. Furthermore, the new technology offers significant advantages to dairy processors and retailers.
