Overview: Cream filling contains real dairy ingredients, and Cr?me filling may not contain any ingredients that have seen the inside of a cow. When bakers are filling a cream puff, twisting a cheese Danish or slicing a banana cream pie, they know that fillings made with real dairy ingredients provide the superior taste, quality and nutrition that will keep their customers coming back for more. By far the most common dairy ingredient in bakery fillings is nonfat dry milk (NDM). Medium-heat NDM is recommended because it has better solubility and fewer cooked notes. High-heat NDM is almost exclusively in the dough and batter arena of a bakery operation.
