Overview: According to the most recent data from USDA Economic Research Service, per capita consumption of natural cheese increased almost 2% from 2001 to 2002. More impressively, during the last quarter of the 20th century, when fluid milk consumption was rapidly declining, cheese consumption continued to grow. This article summarizes that the consumption continues to increase, consumers are buying more of the good stuff, and a few ôgimmesö get thrown the cheese industryĆs direction.
